What a week it’s been mommy! I think it’s time to take your heels off, let your hair down, bring the blender out and make a yummy frozen Mojito.
Being Cuban and living in Miami, I do love a good classic Mojito. However why not be a little adventurous and go for some fruity alternatives. I came across this recipe and immediately thought… I have to try it!

It’s perfect for the summer and definitely well deserved after this busy week. You can either make it frozen or on the rocks. Since it’s summer I made the frozen version. But either way it won’t disappoint!

Here is what you will need.

INGREDIENTS
1 ½ cups chopped strawberries, frozen (fresh and smashed if you make it on the rocks)
1 ½ cups chopped kiwi, frozen
3 tablespoons simple syrup, divided. You could use regular sugar too.
8 fresh mint leaves, divided
3 ounces rum, divided
3 ½ cups crushed ice, divided
Strawberry and kiwi slices, to garnish
Mint leaves, to garnish
DIRECTIONS
In a blender, combine the 1½ cups frozen strawberries, 1½ tablespoons simple syrup, 4 mint leaves, one shot of rum, and 1¾ cups of crushed ice (if you have whole cubes, crush them in the blender first). Blend until well combined and slushy-like.
Pour the strawberry mojito into 3 (8 oz) glasses, filling half-way.
Rinse out the blender jug and combine the remaining 1½ cups chopped kiwi, 1½ tablespoons simple syrup, 4 mint leaves, shot of rum, and 1¾ cups crushed ice. Blend to desired consistency.
Pour the kiwi mojito over the strawberry mojito.
So that’s basically it, but I like things pretty. The traditional or classic Mojito is typically served in a highball glass, a slim 10-ounce glass. But this is a frozen and non traditional Mojito so let’s spice it up. You can use  mason jars, hurricane or a daiquiri glasses, or even margarita glasses, why not. Garnish it with kiwi, strawberry, mint and serve immediately.

      It was awesome! You can also make a skinny version by using Stevia instead of real sugar or simple syrup.

      Is this a new recipe you had? It’s acatlluy great for items you have stored or about to buy. You wouldn’t believe that you can make something out of the only ingredients you had. Your photo and plating looks good too, great job!
